When the Aloe Ferox plant is harvested, the first process that occurs is to gather the bitter sap. The large leaves are cut from the plant and then put into a circle or tub so that they can "let down" their sap. See the picture below. The sap is gathered and then taken to the plant where it is heated until it crystallizes. When cooled, the sap is then broken down to small particles that are called Bitter Crystals.
